State Fair Cupcake: Corn!

Well, it's still State Fair week, which means another fair-themed cupcake!

One thing I try to get at the fair is a roasted ear of corn. It gives the illusion of healthiness as it isn't fried or processed too much. However, it pays to keep in mind that the roasted ear is dipped in melted butter prior to serving!  Anyway, the corn stand is extremely popular and always has a crowd milling about in front. Don't let the mob intimidate you, though - the line moves pretty fast. Here are some reasons you should get some:

  • Support your state farmers! The fair is supposed to be an agricultural event, after all.
  • Celebrate the fact that Minnesota's corn crop has done pretty well, considering the drought in most of corn country.
  • It's only three bucks!
  • The cobs are all composted! Yay!
  • Did I mention it's dipped in butter?

Okay, here's the low down on this cupcake. You've probably seen this idea around before. I got it from the awesome cupcake-decorating book called, "Hello, Cupcake!"   Most times people show three cupcakes side by side to make a whole cob, but I thought just one was cute (even if it's not the right shape). This one is covered in yellow jelly belly beans for the "kernels" and a yellow starburst for the "butter". I bought the candy at a candy store in downtown Minneapolis called "Amy's Confections".

State Fair Cupcake - Cookies & Milk!

It's State Fair time here in Minnesota! The fair started last Thursday and goes through Labor Day. Anyone who reads this blog knows that I love the fair. So, this week I'll be featuring some cupcake decorating ideas inspired by some of my favorite things at the state fair.

One of the booths that are super duper busy at the fair is Sweet Martha's Cookies. You can buy a huge pail of cookies (huge! and overfilled to the point where you have to eat a bunch of cookies in order to get the lid on) and then head over to the all-you-can-drink milk booth (chocolate or skim, $1) and have a milk and cookies fest! Anyway, here is my tribute below. It is a chocolate cupcake with vanilla frosting but I think a chocolate chip cupcake or even a tres leches cupcake would be great! The "cookies" on top are cookie crisp cereal and I added the straw to represent the "milk".

Pumpkin Carrot Spice Cupcakes with Cinnamon Cream Cheese Frosting

Happy October!

Yay, October has arrived! This is my favorite time of year - leaves are changing, cheery orange pumpkins are everywhere, it's hoodie weather (well, not here - it's been in the 80's! in Minnesota!), and, at the very end of the month, is the frosting on October's cake - Halloween!

Anywho, I love pumpkin anything and have been pondering these cupcakes for a while. We got a bunch of carrots in our CSA box last week, too, so it seemed like this might be a good way to use some up!

I used the recipe from here, and modified it slightly:

I also made cupcakes instead of cake, so the baking time is much quicker! It makes about 2 1/2 dozen cupcakes.

Ingredients
3 cups flour
2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
1 tsp cinnamon *note* you can use pumpkin pie spice, as the recipe suggests. I just never have any around
1 tsp ginger
1/4 tsp nutmeg
1/4 tsp clove

3 large eggs
3/4 cup granulated sugar
3/4 light brown sugar
1 can pumpkin (15 oz)
1/4 cup whole milk
1/2 tsp orange zest
2 tsp vanilla extract
2 medium carrots, grated (about 1 cup) *note* the original recipe says "coarsely grated" but I would grate them pretty fine unless you want pumpkin cupcakes with just the occasional big chunk of carrot

Directions:

1. Preheat oven to 350 (I preheated mine to 325 because it is always way hotter than it is supposed to be. You know your oven best, so if you have a decent oven and not a crappy rental kitchen oven then go for 350).
2. Make sure eggs and milk are at room temp. This makes a big difference in the end product. You can place the eggs in a bowl of warm water for 5-10 minutes and that should do the trick. For the milk, I used dehydrated powdered milk so just added warm (not hot!) water to it. For regular milk, you can microwave it a little bit to get it to lukewarm.
3. Place all dry ingredients (listed at the beginning, exclude the sugar) in a large mixing bowl and mix together with a whisk until well-combined.
4. In another mixing bowl, combine the rest of the ingredients. When well-combined, pour wet into the dry ingredients and mix until just combined. That means that there aren't any pockets of dry ingredients (make sure to stir up the bottom) but it will still be a little lumpy. Don't overmix!
5. Fill cupcake liners a little more than half full and pop 'em in the oven. Bake about 12-15 minutes or until toothpick inserted in center comes out clean (no goo and no crumbs).
6. Let cool completely before frosting.

Frosting Recipe
2 blocks of cream cheese (8 oz each) (I used Neufchatel because it's lower in fat but whatevs)
1 stick of butter
powdered sugar (start with a cup)
1/2 tsp vanilla extract
1 tsp cinnamon (or to taste)

1. Soften butter and cream cheese in the microwave. Be careful not melt them, though!
2. Use paddle to mix in stand mixer or mix on low with hand mixer. This is not a "fluffy" frosting so you don't want to incorporate too much air.
3. Once butter/cream cheese mixture is lump-free, start adding the powdered sugar. Mix on low or you will have a cloud of sugar in your kitchen! Keep adding sugar until you reach a good balance of consistency/sweetness. The sugar helps make the frosting less gooey but it also (obviously) adds sweetness so you don't want to lose the tanginess of your cream cheese.
4. Add cinnamon and vanilla to taste and mix until incorporated.

Rainbow Bright


Top o' the mornin' to ya! Happy St. Patrick's Day! I'm not in the least bit Irish but I do enjoy the color green, loved the four days I spent in Dublin a million years ago, like cute boys with Irish accents, and love the idea of the pot of gold at the end of the rainbow.
I couldn't resist making these rainbow cupcakes, even though they have been done so many times in blogs all over the place. They are a lot of fun, but take a while to layer all of the different color batters into the cupcake liner. I would recommend using cheap white liners because then the rainbow pattern will show through (for once, those cheapies come in handy! don't waste the pretty, expensive ones you have. Unless you have gold liners, which would be pretty awesome)

I also think it might be a good idea to put the different color batters in ziploc bags with a hole cut in the corner so that you can control the amount of batter in your cupcake liner. I used a spoon and it was somewhat challenging. I also used cake mix and I think a runnier cake batter might work better for these, giving you more even layers.

Above is my cupcake display, each cupcake topped with sprinkles and jelly beans in the appropriate colors. The candy at the end is the gold at the end of my rainbow. Also, I had this sparkly container below so decided that would be my pot o' gold. No ugly black cauldrons for any leprechaun of mine!

Some Treats in Red, White, and Blue!

I made a few patriotic type treats this past week. Above is a pic of some red velvet cupcakes with cream cheese frosting. The pics below show two ways to decorate them. It's actually pretty easy, although a little time consuming, to make your own pinwheel decorations but I found these on sale! The other pic has some plastic stars on top, in addition to the blue and red sprinkles. That was kind of an accident, as my top-heavy cupcake rolled over onto the stars. Since the stars aren't edible, maybe just go with the sprinkles!

I also made a black-raspberry fool, shown below. I think I overbeat the whipped cream a little but it was still delicious. Just berries (of which we have a ton, having gone picking at a our favorite secret spot) and whipped cream, folded together.
Last, here is a pic below of the tart I made earlier this week. I used store-bought puff pastry because I had some I had to use up. It also has some pastry cream and I'll give the recipe and instructions for that in another post.

Cupcakes

My dad likes yellow cake with chocolate frosting. Yup - no fancy flavors or icings allowed. Since I couldn't experiment with different flavors for his birthday cake, I wanted to do something fun with the presentation. I ran across this idea at:

and thought it was so cute! And so easy that I wish I had thought of it myself. Plus - edible topper made from a pb cup? Delicious and genius.

Valentine's Day Treats


Here are some cute cupcakes that I made for the kids at work. I used a mix and made a simple buttercream frosting. My frosting gun broke a while ago so I snipped off the corner of a ziploc bag to frost these. It worked pretty well, I think. To make the mini cupcakes below, I used little metallic bon-bon wrappers that I bought at Michaels. It's hard to get a sense of scale in this photo but they are about 1 1/2 inches wide. I baked them at 325 degrees for about 6--7 minutes and they turned out perfectly. They're bite size so great for a party where people don't have utensils.
